Dr. Baby Ceremonial grade Matcha is the premium first-harvest organic matcha green tea powder, ground from the most tender leaves each spring on the mountains of Japan.

Ceremonial grade matcha traditionally means that tea masters use their best matcha powder for the tea ceremony. Thus, ceremonial is the highest grade in a matcha collection and will differ across matcha brands. Culinary grade is from second or later harvests with much cheaper cost.

In the first harvest of each spring, farmers select the most tender, premium quality matcha green tea leaves, and grind them as our ceremonial matcha green tea powder. It has a purely green color and the smoothest and richest taste to be considered ceremonial grade matcha.

Matcha is a fine powder made from young green tea leaves. Before 15th century, matcha tea had a very bitter taste and it was really considered more of a medicine than a drink to be savoured or enjoyed. Then, during 15th and 16th centuries, tea growers in japan discovered that if the tea plants were kept in the shade for 3-4 weeks before being picked in the spring harvest, the flavor of the tea softened and became less bitter.
